Leaner Tip: Substitute cream cheese with laughing cow light creamy swiss cheese to reduce recipe by ~45 calories per 20grams.


  • 3 cups of cucumbers (sliced about 1/4″ thick) for 12 slices
  • 4 wedge slices of Laughing Cow Light Swiss Cream Cheese
  • 1/4 cup of fresh dill (minced)
  • 3 tsp of lemon juice
  • 10 oz of smoked salmon


  • Layer on the laughing cow light creamy swiss cheese on top of the cucumber slices (about 1/3 wedge per cucumber slice)
  • Add about 1.5 oz of smoked salmon per cucumber slice.
  • Drizzle lemon juice on all slices.
  • Sprinkle dill on all pieces
  • (Optional) Add one small piece of sun dried tomato per slice of cucumber
