Ingredients

  • 3 cups of cucumbers (sliced about 1/4″ thick) for 12 slices
  • 12 tsp of avocado
  • 1/4 cup of fresh dill (minced)
  • 3 tsp of lemon juice
  • 10 oz of smoked salmon
  • 1/2 tsp of smokey paprika
  • 12 small pieces of sun-dried tomatoes

Directions

  • Layer on 1 tsp of avocado on top of each cucumber slice.
  • Add about 1.5 oz of smoked salmon per cucumber slice.
  • Drizzle lemon juice on all slices.
  • Sprinkle dill on all pieces
  • Sprinkle smokey paprika on each slice.
  • Add one small piece of sun-dried tomato per slice of cucumber
